Prime Rib for the Holidays

Hopefully during this holiday season, a prime rib is in your future meal plans. AgriBeef Company Sales Coordinator Liz Moore shares some tips when it comes to prepping and cooking prime rib. She suggests using a bone-in prime rib for more added flavor. Her first step is to use a rub
Moore: “We are a big fan of the Penzie’s Seasonings. They have a prime rib rub that has a little bit of sugar, some celery seed, onion powder. It has become the staple for us. We’ll rub it and let it set out for a half of an hour or so before we ever start the cooking to let it come to room temperature and let those flavors soak in from the rub.”
Moore continues with instructions on how to cook the prime rib.
Moore: “We like to give it a sear so it has a nice crust. We will do in the same roasting pan that we are going to put in the oven — put a little oil in the bottom and it nice and brown on that top fat cap and all around the edges. I like to start it out at really high heat for about 20 minutes — between 450 and 500 degrees. That gives it a really caramel coating on the outside and then we will reduce it down to 300 or 325 and just let that cook. Always use a digital thermometer. We like to pull it out at about 110 degrees for medium rare. You let it set for 20 minutes and it will come out right about perfect.”
