I had a wonderful chat with Karianne Fallow, Chief Executive Officer of the Idaho Dairy Products Commission about a U of I scientist who makes good things out of dairy manure: “It is hard not to have a smile on your face when you talk about manure as it relates to the dairy industry, but let us wipe the smile off our face and talk about something that is epic and profound. There is a professor at U of I, Dr. Eric Coats has discovered a process by which he can turn cow manure into biodegradable plastic. I think it is a great example of the ingenuity of Idaho’s dairy farmers. We are the third-largest producer of milk in the country and now seemingly, potentially in the future we could become the largest producer of plastic bottles. (Laughter) Dairy farmers are good stewards of the land and they practice some of the most sustainable on farm practices. This is just another example and it is very exciting.
