Dr. Samantha Ramsay is Director of the Coordinated Program in Dietetics for the School of Family and Consumer Sciences at the U of I.  If you’ve ever wondered and been frustrated by the fact that your children don’t care for a specific type of food you’re trying to get them to eat, You'll be happy about Dr. Ramsey’s research. Here’s U of I spokesperson Kathy Wilson talking about Dr. Ramsay. “Some of the information that she has discovered over this last year doing a taste preference study in children from the Child Development Center at the University of Idaho so it is a nice collaboration, those children become the panelists in the taste tests and she has created some very nice ways of really engaging with children to make sure that they are expressing their preferences without undue influence from the testers or parents or the situation. She is researching the preference people have for different types of wheat products, specifically bread. In particular she is interested in whole wheat products because of their nutritional value. What she did with the children was compare bread made from hard red wheat with that made from hard white wheat which has a different flavor and texture.”
