August is prime time for Colorado produce but one of the gems whose harvest is underway is Colorado’s sweet corn.

This month the Department of Agriculture’s Colorado Proud program is featuring the sweet corn in it’s promotions and a recipe it makes available on its website.

White:“Colorado has about 4, 000 acres of sweet corn that we grow every year. We’re very well known especially in the Olathe area on the Western Slope for sweet corn. And our recipe is a simple Grilled Sweet Corn. you put mayonnaise and Mexican crema and BBQ seasoning a little lime juice and cotija cheese and garnish with a little cilantro. A really nice Colorado Proud recipe for August. “

Olathe farmer John Harold of Tuxedo Corn told the Colorado Sun that despite extra precautions and worries about the COVID -19, this is a big year. He’ll harvest more than 700,000 containers this year, about 33.6 million ears.

August also is the time to celebrate Colorado Farmers’ Markets.. A good place to find some locally grown sweet corn. Farmers markets are looking a little different this year with social distancing and other COVID safety precautions in place but they are still open with a variety of locally grown produce.
