Every month the Markets Division of the Colorado Agriculture Department highlights a locally grown or produced commodity to showcase the variety of foods and ag products made in the state.

The folks at Colorado Proud have chosen locally grown mushrooms for April.

White: “I think a lot of people don’t realize that we grow them here in Colorado. Whether it’s our farm in Alamosa or Fort Collins or southeastern Colorado, we’re really seeing an increase of producers to grow mushrooms. And it’s not just your typical portabellas or buttons or criminis that people might be familiar with. Some of our producers are growing really interesting varieties like Lion Mane and Cinnamon Caps and King Trumpets. Some varieties I had never heard of before and the pictures of them are really gorgeous. We have on our website this month at Coloradoproud.org a simple recipe for grilled mushrooms. We also included a list of several producers that do have mushrooms currently available.”

Mushrooms are fat free, very low in sodium, contain more than 12 vitamins and minerals and are an excellent source of B Vitamins.

Locally grown mushrooms can currently be found at Colorado Mushroom Farm in Alamosa, Hazel Dell Mushrooms in Fort Collins, Innovative Ag in Steamboat Springs and Megan's Mushrooms in 4 counties.
