Okay. The hunt is over and in your freezer, you got geese or duck or elk or venison, even rabbit. All kinds of ways to prepare the meat, aren’t there. Burgers, steaks, sautéed breasts and wings, but wait. Has anybody thought about sausage? As it turns out, with whatever you have in the freezer and with a bit of kitchen help from Field & Stream you can find the answers to some common Game preparation questions. The January issue just became a recipe book for the making of four great and delicious types of sausage.

New Orleans-based and celebrated wild-game chef Jean-Paul Bourgeois answers some common cooking questions, and shares his recipes for showstopping items such as Maple Venison Breakfast Sausage, Jalapeño and Cheese Boar Bratwurst, Chimichurri Honker Sausage, and More.
