Each month the Colorado Department of Agriculture features a different commodity to highlight the variety and quality of products grown in the state.

Colorado beef takes center stage for the month as the Colorado Department of Agriculture highlights prime rib in its Colorado Proud Program.

White: “Cattle and calves is Colorado’s top agricultural commodity. We have 2.8 million head of cattle in the state. It’s definitely out top ag industry in Colorado.”

Wendy White marketing specialist with the Department of Agriculture, tells Colorado Ag Today they’re focusing on local prime rib which is a prime example of a memorable holiday dinner.

White: It’s a great center of the plate for a lot of holiday meals. Instead of a recipe this month, we’re focusing on tips for preparing prime rib. It’s a really popular cut to feature during holiday meals. The prime rib roast or the standing rib roast. We have some great tips on how to select, prepare, cook and how to pair wine with it as well.

The tip sheet at Coloradoproud.org includes information about how big of a cut you’ll need to feed your family and friends, whether to buy a roast with bone in or not, how to season the roast and how to keep it from drying out or being over done.

And because beef is so popular in Colorado it is easy to find at your winter farmers’ market, grocery store, or direct from the rancher across the state.
