The United States Potato Board’s Spud Nation is the first food truck of its kind. Its farmer owned and brings the adventure of trying new and exciting potato dishes to its customers. Spud Nation’s Executive Chef is Travis Howard and he is responsible for all of the existing and creative menu items available on the food truck. Howard shares more
Howard: “ We feature all different types of potatoes, different varieties and different styles of preparation. We feature frozen and dehydrated products as well as and fresh. Some of the fun recipes that we are working with on the truck — is a Spudinion which is what we call our potato-onion rings. Where we take mash potato and work it into pastry dough with a lot of onion flavor — chopped onions and chives and onion flavor — we pipe those out into little rings and fry them up crispy. It is really unique texture and a unique preparation for a potato.”
The first of many spud nation food trucks is a shiny green and black truck name Bette located in Denver. Chef Howard continues
Howard: “We want to have some fun innovate items for instance we have a potato funnel cake that has been popular. We also try and feature some more familiar things like our potato skins our pig skin pile ups and some meat and potatoes dishes like our steak and corn and potato croquettes.”

Food trucks are the fasting growing segment of the food service industry.
