The Colorado Department of Agriculture's Colorado Proud Program just wrapped up a month of celebrating its 20th anniversary.

It's starting it's 21st year highlighting Colorado beets and bacon.

Program spokeswoman Wendy Lee White.

"A beat and bacon hash. It's a great combination of beets, which you can use any color. There's so many different varieties with the yellows, and the golds, and the reds, and the even the striped ones and then mix it with some bacon and onions and a little brown sugar and basalmic vinegar to add to a real nice dish that will ease us into the fall season."

Beets are grown in a variety of areas in Colorado.
