I had the distinct pleasure of a conversation with Executive Director of the Idaho callus Association, Mr. Wyatt Prescott. It was fun but controversial. “David how are you? I’m fine my friend, how are you? Couldn’t be better. It’s Independence Day week and I am looking forward to a good Fourth of July. Well now that you’re all happy, I'm going to rile you up just a little bit. (Laughter) Listening to NPR today, Jude Caper was on. She was a party of one defending the beef industry while three other guys were completely impugning it. The angle was primarily raising beef adds more to global warming and pollution than just about any other industry. They kind of gang got up on Jude. Unfortunately there is a very vocal contingency of individuals that are definitely in the minority, that have an agenda against, not just beef, but all animal agriculture. No matter what we do in our production system, we will not satisfy these folks. The reality is that we are extremely proud of our industry and the story we have to tell and how sustainable we are. We are one of the world’s oldest but original industries that has evolved over time and is becoming more and more sustainable every single year. I have a cheat sheet here that tells all the statistics and that is what Dr. Caper reviewed and we have a good story to tell.
