Huckleberry Gold. A potato that is extra healthy. Montana State University researchers have found several varieties of potatoes that could help foil type 2 diabetes. I talked with Alice Pilgeram, an assistant research professor. "There are a lot of benefits to a slow digestion than there is with rapid digestion. So of the six varieties that we identified, one of them is already in production in the Pacific Northwest. It's a variety of potato called Huckleberry Gold. It is actually owned by the Tri- State Potato Commission. That means Washington, Oregon and Idaho. Where Montana comes into the game, if Huckleberry Gold develops into a significant potato, Montana is where the seed will be produced. We will produce this gorgeous, clean seed. That will be sent to Idaho, Oregon and Washington. The three states are where the potatoes that people buy in the grocery store will be produced. But they will start here. Huckleberry Gold is a purple skinned potato with yellow flesh. We have other varieties. One of them is a cream-colored skin with cream colored flesh. What we are hoping to happen in the next couple of years is to bring along these other varieties that are very beneficial from a diabetic’s point of view.
