Colorado Department of Agriculture Offers August Recipe and Resources

Governor John Hickenlooper proclaimed August Colorado Proud month as a way to highlight the variety of agricultural products that are available in the state, from fresh fruits and vegetables, to dairy products, eggs, beef, lamb, and pork.

The Department of Agriculture is highlighting beets which have a long history in Colorado agriculture. According to the Colorado State Extension, the first sugar beet processing factory was built in Grand Junction in 1899. By 1906, factories could be found in many Colorado cities. The beet sugar industry led to, population and urban growth, and a more diversified agricultural culture.

Wendy White is with the Colorado Department of Agriculture.

"So our recipe this month features garden beets. We feature a different commodity every month and these yellow beets that are featured this month are really different. There's all different varieties available in Colorado and this is one you can give a try and even if you don't like beets I think this is one you will enjoy."
