Colorado State University's Smoked Pork Sausage Declared Winner

At the recent annual meeting of the American Society of Animal Scientist had a Battle of the Brats competition and Colorado State University’s Smoked Pork Sausage with Monterey Cheese and Jalapeños was declared the winner beating out 12 other universities for the title. CSU’s Meat Lab Manager Joe Bullard describes the winning entry
Bullard: “So the sausage that we started with was a pork-beef blend. We threw in some beef for color when the product cooks. Then some salt, sugar and some other spices and tested to make sure it all fit together. Then the big thing that set us above everybody else is we put 10 pounds of fresh jalapeños and Monterey Jack cheese in the sausage and then we fully cooked it and smoked the product. That is what set us apart on that was the smoked sausage and jalapeño cheese."

Delmore: “We sell all our products through the website but we also take walk ins on Thursdays and Fridays customers come in and get their orders that they placed online but we also take walk ins at the animal science building. There is a big banner. They can park there and walk in and buy pretty much any product — steaks, roasts, sausage, bacon, ham the whole gamut. Everything we do it is the students are the people doing it. They are making the product. In fact it was students under Joe’s supervision that made this product.”
