Caribou Meat

Damon Bungard and his father went on a caribou hunt up in Alaska and to say the least they were successful. As they were wrapping up camp after a six day hunt... "We had our fourth tag filled and we were within sight of the tent which was great, it was 10 o'clock at night so we had him quartered and with the other and we had all of them hung up. The plane came the next day, flew us out and we then hauled tail. I loaded a bunch of caribou straps and racks on the roof of the rental car drove back to Anchorage and dropped our meet with a processor to ship it to the lower 48 to our homes, his in Georgia, mine in Tennessee and that was that. We had a couple of years and several hundred pounds of meat. Is caribou meat good? Caribou to me is like really really good venison. Elk is like really really good beef but caribou is a bit richer and like very good venison. Some people knock caribou, don't enjoy it as much, I guess it's when they shoot the bulls later in the rut. When you're shooting them in the beginning, they're starting to lose some of their velvet, I find caribou to be delicious."
