Potato Nutrition Handbook is a Good Resource
I’m KayDee Gilkey with the U.S. Potato Update.
The United States Potato Board continually invests in new and ongoing research about potatoes and their role in human health and nutrition. It is of great interest to the USPB as well as the entire potato industry. Annually since 2008 they’ve gathered that information and research into their USPB Potato Nutrition Handbook.
Meredith Myers, Public Relations Manager of the United States Potato Board explains that the handbook is a resource of all-things potato as it relates to nutrition research and more.
Myers: “This handbook, in addition to the science and research that is included it in, we also have a number of healthy recipes and information about how the food service industry uses and loves potatoes. We also have information about potatoes types of and recommend uses of potatoes types. So like I said it is all-things potato handbook.”
Even though the primary audience of the handbook is nutrition professionals, Myers says it can be a great resources for potato growers as well.
Myers: “It is also very important for the potato industry, so that they can help to further the nutrition message in their own communications.”
Some interesting potato facts included in the nutrition handbook are that potatoes, in addition to be gluten-free, are the most affordable source of potassium in a grocery store’s produce aisles.
